INGREDIENTS:

3 – 8 pounds sirloin, cut in 1/2-inch cubes

INGREDIENTS for Marinade:

1 bottle Pico Pica Hot Sauce
2 large red chile peppers, seeded and finely chopped
1 onion, chopped
2 large garlic cloves, crushed
1 teaspoon ground cumin
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon cinnamon
4 cloves
1 Tablespoon sesame seeds
  Juice of several limes
1/4 cup chopped cilantro, loosely packed

TO PREPARE:

1.  Prepare Marinade: Mix all ingredients together.

2.  Place sirloin in a plastic or glass container and add Marinade.  Marinate in the refrigerator overnight.  To dilute Marinade, add water and more lime juice to taste.

3.  Skewer meat as individual kabobs and broil or barbecue to desired doneness.

4.  Count on 1/2 pound or less total meat portions for each person.

SERVES:  6 - 16
