Swiss-Topped Chicken Breast from 'Chelle



 

Swiss-Topped Chicken Breast





Makes four servings.



 


Season 4 chicken breast halves (4oz each) with salt and pepper.  Heat 2 Tablespoons unsalted butter in a 12 inch skillet over high heat until melted and slightly brown.  Add the chicken and cook 3 minutes on each side.  Meanwhile, crisp 8 slices fully cooked bacon in microwave as package directs.  Remove skillet from heat; place chicken on cutting board.  Spread each cultet with 1 teaspoon honey-dijon mustard, then top each with 2 slice bacon and 1 folded slice of Swiss cheese (4 slices total).  Reduce heat to medium and return pan to burner.  Carefully, add chicken to pan and cover.  Cook 3-4 minutes or until chicken is no longer pink and cheese is melted. 



 


Per serving:  319 calories  20g fat (9g sat fat)  32g protein  3g carb  0g fiber  344mg sodium  109 mg cholesterol



 


 



 


I am just using plain Dijon mustard instead of honey-dijon.  Also, I may not use butter, just spray the pan to cut back on the fat.
